Dark Chocolate Mousse




Ingredients:

100g Dark chocolate (i used 70%)
2 tbs water
1 tbs sugar
2 eggs (separated)
a pinch salt
a pinch of cinnamon powder

Method:

1. Combine the chocolate and water in a heatproof bowl set over a pan of barely simmering water.
2. Heat until the chocolate is almost completely melted, stirring occasionally.
3. Remove the bowl from the heat and stir until the mix is smooth. Set aside and let it cool to room temp.
4. In a bowl, whip up the egg whites, salt and cinnamon until stiff peaks form. They should be thick and smooth.
5. Stir the egg yolks into the cooled mixture.
6. Add 1/3rd of the whipped egg whites to the bowl with the chocolate and fold gently to lighten up the mixture. Fold in the remaining egg whites gently.
7. Portion the mixture into individual bowls/glasses and refrigerate for atleast 3 hours.
[A good dollop of whipped cream on top would go well!!]
